Ingredients

Scale
  • 2 cooked chicken breasts (shredded or chopped)

  • 1 cup pesto sauce (store-bought or homemade)

  • 4 cups mixed greens (such as spinach, arugula, and romaine)

  • 1/2 cup cherry tomatoes, halved

  • 1/2 cucumber, sliced

  • 1/4 red onion, thinly sliced

  • 1/4 cup Parmesan cheese, grated

  • 1 tablespoon olive oil (for drizzling)

  • Salt and pepper, to taste

  • Optional toppings: pine nuts, avocado, olives, or croutons

Instructions

Step 1: Prepare the Chicken

Start by cooking your chicken breasts. You can either bake, grill, or pan-sear them for about 6-7 minutes per side until fully cooked and juicy. Once cooked, shred or chop the chicken into bite-sized pieces.

Step 2: Prepare the Salad Base

In a large bowl, add your mixed greens, cherry tomatoes, cucumber, and red onion. Toss everything together gently.

Step 3: Add the Pesto

Pour your pesto sauce over the salad and toss everything together until evenly coated. The pesto adds a burst of flavor, making this salad extra delicious!

Step 4: Add Chicken and Parmesan

Top the salad with the shredded chicken and grated Parmesan cheese. Give it a final toss, and drizzle with a little olive oil for extra richness. Season with salt and pepper to taste.

Step 5: Serve and Enjoy

Divide the salad into bowls or serve it family-style on a platter. Garnish with optional toppings like pine nuts, avocado, or croutons for a little crunch.

Notes

  • Add extra veggies: Try adding bell peppers, olives, or even roasted zucchini to boost the flavor and nutrient content of your salad.

  • Swap the chicken: You can use turkey or grilled shrimp if you prefer, or make it a vegetarian meal by adding roasted chickpeas or grilled tofu.

  • Make it creamy: For a creamier pesto chicken salad, you can add a dollop of Greek yogurt or sour cream to the pesto before tossing it with the salad.
