Lemon Tiramisu is a refreshing twist on the classic dessert, featuring layers of creamy mascarpone and tangy lemon curd, alternated with delicate ladyfinger biscuits soaked in lemon juice. It’s garnished with fresh lemon zest and mint leaves, offering a zesty, light flavor. This no-bake treat is perfect for a bright, citrusy
1 ½ cups (360g) mascarpone cheese
1 cup (240ml) heavy whipping cream
⅓ cup (65g) granulated sugar
2 teaspoons lemon zest (from 2 lemons)
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
1 package (7oz or 200g) ladyfingers (savoiardi biscuits)
½ cup (120ml) fresh lemon juice
½ cup (120ml) water
2 tablespoons honey or maple syrup (optional for added sweetness)
Lemon zest for topping
Fresh mint leaves (optional)
Powdered sugar (optional)
In a large mixing bowl, beat the mascarpone cheese with an electric mixer until smooth and creamy.
In a separate bowl, whisk the heavy whipping cream with sugar until stiff peaks form.
Gently fold the whipped cream into the mascarpone cheese, followed by lemon zest, lemon juice, and vanilla extract. Mix until fully incorporated. Set aside.
In a shallow bowl, combine fresh lemon juice, water, and honey (or maple syrup) to create the lemon syrup.
Quickly dip each ladyfinger into the lemon syrup for about 1-2 seconds, making sure they absorb some of the liquid but don’t become soggy.
Lay the soaked ladyfingers at the bottom of a 9×9-inch or 8×8-inch dish, covering the base with a single layer.
Spread half of the lemon cream mixture over the layer of soaked ladyfingers.
Repeat with another layer of soaked ladyfingers and top with the remaining lemon cream mixture. Smooth the top with a spatula for an even finish.
Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld together.
Before serving, garnish with fresh lemon zest, a light dusting of powdered sugar, and a few sprigs of mint for an extra touch of freshness.
Serve chilled and enjoy!
