This easy Chopped Salad recipe is filled with fresh veggies, cheese, and a tangy vinaigrette. It’s the perfect side dish or light meal that’s quick to make and packed with flavor.

Ingredients

  • 4 cups mixed greens (lettuce, spinach, etc.), chopped

  • 1 cup cucumber, diced

  • 1/2 cup cherry tomatoes, halved

  • 1/2 cup red onion, finely chopped

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup olive oil

  • 2 tablespoons red wine vinegar

  • 1 teaspoon honey

  • Salt and pepper to taste

Instructions

  • In a large bowl, combine the mixed greens, cucumber, tomatoes, red onion, and shredded cheddar cheese.

  • In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt, and pepper until well combined.

  • Pour the dressing over the salad and toss to coat the ingredients evenly.

 

  • Serve immediately for the best texture, or refrigerate if you prefer a chilled salad.

Notes

  • For a creamier dressing, you can add a dollop of Greek yogurt to the vinaigrette.

  • Feel free to customize the salad with your favorite veggies like bell peppers or radishes.

 

  • This recipe can be made ahead, but keep the dressing separate until ready to serve.
